To make simple syrup, finely grate ginger (don’t peel); place in Multipurpose Pot. Add sugar and water. Stir to combine. Add tea bags. Bring to a boil; reduce heat and simmer until slightly thickened, about 15 min. Gently press tea bags with the back of a spoon to release more flavour and colour. Using a fine mesh sieve, strain. Pour in Cruet and chill.
Slice lemons in half. Using 2-in-1 Citrus Press, squeeze juice from lemons into a large pitcher. Add club soda, juice, simple syrup, and gin. Stir gently to combine.
Divide between eight glasses filled with ice.

Prep the syrup ahead of time; store in Cruet up to 1 week.
Look for beetroot juice in the juice or natural foods sections of the grocery store. Can’t find it? Simply swap with pomegranate juice.
