These little patties are a perfect way to transform leftover quinoa into a delicious meal.


Ingredients
2 cups
cooked quinoa
1 cup
breadcrumbs
14 cup
parmesan cheese
2 tbsp
Spinach Dip MixSpinach Dip Mix

eggs, lightly beaten
1 tbsp
vegetable oil

Preparation
  1. In a 4-cup prep bowl, combine dry ingredients and stir in eggs.
  2. Let rest for a few minutes to allow mixture to absorb moisture. Shape into patties.
  3. Heat frying pan to medium. Add oil and pan-fry patties for approximately 5 minutes per side, until crisp and brown on the outside and warmed through.
