Toppings (optional): Apple Pie Spice
- In a small saucepan, bring water to a boil. Stir in sugar and spice until dissolved. Reduce heat to medium; simmer 7–10 min, until syrup coats the back of a spoon. You should have about 2⁄3 cup syrup; it will continue to thicken as it cools.
- In another saucepan, bring milk and 1 tbsp syrup to a boil over high heat. When bubbling, remove from heat and use Air Wand or whisk to froth milk.
- Divide hot coffee between mugs or thick-walled glasses; top with frothed milk and extra spice, if desired.
Use warm, leftover syrup as a flavoured sweetener in coffee, or drizzle over cake, fruit, pancakes, or other desserts.
Cover and store leftover syrup in the fridge for up to 1 week.
