1 cup basmati rice
2 cups + 1 tbsp water
1 tbsp Miso Broth Mix, or Epicure Broth Mix of your choice
1 lb (450 g) plant-based meat substitute
2 cups diced bell peppers
1 cup diced frozen mangoes
1 tsp sesame oil
1 tsp low-sodium soy sauce
1 large head iceberg lettuce
Toppings (optional): hot sauce, cilantro, lime wedges
- In Multipurpose Steamer, place rice, 2 cups water and broth mix; cover. Microwave 6 min, then set aside in a separate bowl.
- In Multipurpose Steamer, place seasoning, meat substitute, peppers, mangoes, remaining 1 tbsp water, sesame oil, and soy sauce. Gently mix to combine. Microwave, 6 min.
- Meanwhile, cut lettuce into four wedges, remove stem ends and gently peel the wedge leaves off two at a time to create strong, sturdy, crunchy boats for your filling.
- Layer rice, then protein mixture on lettuce. Top with extra toppings, if desired.
